Meal Planning for me is really essential for my lunches for a couple reasons.
First, if you are on a calorie restrictive diet like myself, meal planning and prepping assures me that I can have well balanced, nutritious meals at regular intervals throughout the day, without the hassle of having to go find something at my office or close in town. Usually if I dont take my meals to work, its alot more expecnsive to eat and I make really bad food choices and totally dont follow my diet plan.
Also Lunch is generally my biggest meal of the day and that is intentional because it is the time of the day when i'm most active and can burn more calories when Im busy in clinic. Because of the workload i deal with, My lunch generally gets eaten over a couple hours and when i can get to it. So I usually prep a couple different things I can eat throughout the day.
I have several small go to menu items that I use that include all my basic macronutrients I need to eat throughout the day. That gives me a little variety and I dont get so bored with what I am eating. I suggest you find a couple different things you like and mix it up.
On this Post I will share one that I make quite often with you. It has all the nutrients I need, is easy to make, and keeps well when I prep my lunches for several days. We'll go into different meal prep containers later on, but I generally use 2 complartment containers so I can seperate and microwave easier if needed. Plus, I kinda dont like different foods touching each other on my plate! I know, weird!
